Our bottarga is exclusively made from the roe sacs of the Bluefin Tuna (Thunnus Thynnus), a highly prized and protected species. The curing process follows an ancient tradition, passed down through generations, involving meticulous salting, pressing, and air-drying. This slow and patient artisanal method is what imparts our bottarga its characteristic amber color, firm texture, and unique sea aroma.
